Meet Adem Özen, the Host of Süleymaniye
Adem Özen is the founder and host of Moss Lounge the Bosphorus, the rooftop restaurant in Süleymaniye, on Istanbul’s historic peninsula. Regulars rarely use his full name. To them he is Moss Adem, the host who remembers how you take your coffee and which table catches the last of the sun. If you want to understand Moss, you start with him, because the warmth people feel in the room is not a finishing touch on the place. It is the foundation of it.

Open the reviews of Moss and the same line keeps surfacing, in a dozen wordings: the owner is a warm man. One guest wrote that Adem and his team are genuinely welcoming, and that the service feels less like a restaurant and more like visiting a friend’s home. Another called it the most peaceful place they had been to in Istanbul for years. These are not stray compliments. They describe a single person’s intention, repeated across hundreds of mornings and evenings.
The nickname tells you something. People do not shorten the name of a host they were merely served by. Moss Adem is what you call someone whose room you have come to think of as a little bit yours.

Adem built Moss around one conviction: a guest should be welcomed the way you welcome someone into your home, not processed the way a busy restaurant moves you along. You feel it in the small things. How to meet him
The best way to understand Adem is to sit at one of his tables.
